My Day in Food Pictures
Scrambled eggs for breakfast, an amazing mushroom omelette for lunch and a huge caesar salad for dinner. And some Vitamin Well, coffee and other drinks in between. More than enough food for one day for me. I love LCHF: no snacks in between are necessary since I'm not hungry! Usually I aloud myself anyways, but right now I'm trying to get my body more toned and I try not to eat when I'm not hungry = the way it should be.

Back in Business
I'd highly recommend anyone to go to Rome, Italy. It's definitely one of my favourite spots in the world from now on. The food is amazing and the surroundings are gorgeous. Also the Italians are very nice and welcoming people.
I can honestly say that my trip hasn't been carb free. Although I've been trying to eat healthy foods that Rome has to offer such as carpaccio, fatty fish, cheese and much more, my diet hasn't been the most ultimate this week. Now I can't wait to get back on track again and start eating the way I normally do. Italy was definitely a great treat though! Their meat and produce taste so much better than anywhere else: the tomatoes are ripe and sweet, the mozzarella is stringy and has a nice texture, fish and seafood are fresh and delicious. In general food is just better over there!
Last night I went to one of Rome's best fish restaurant that's earned one star in Guide Michelin. Their fish carpaccio was to die for! If you ever go to Rome: try it out! (It's just a block away from the Pantheon.)
Now I'm looking forward to my bacon and eggs in the morning!

When in Rome
I'm in Rome at the moment and I have to say: I absolutely love it!
It's the land of carbs after all and even though I try my best to stay off of it, you can't come to Italy and not eat pasta: at least I can't!
However Italy also offers tonnes of LCHF-friendly foods, such as cheeses and olives. The olives here are the best ones I've ever had. Actually, everything tastes better here for some reason. And let's not even get into the coffee in this country.. The cappuccinos here are amazing. Not overly surprising though. So glad I finally went!

Gratinated Ham with Spinach
This really turned out delicious! Best part is that you can prepare it hours before serving it.
• 1 Ib (450 g) of Ham
• 1 Eggplant
• 1 cup (2.5 dl) of Fresh Mushrooms
• 1/2 a Leek
• 2 cups (5 dl) of Baby Spinach
• 1.2 cup (3 dl) of Heavy Cream
• 3/4 cup (2 dl) Tomato Sauce
• 2 Tbsps of Sambal Oelek
• 1 cup (2.5 dl) of Grated Cheese
• Salt & Pepper
• Thyme
• Butter
Preheat oven to 225° C (440° F). Fry mushroom in butter. Add the leek. Salt and pepper. Put aside.
Cut ham and eggplant into 1/2" slices. Place the slices in an oven proof pan. Add fried mushroom and leek.
Mix cream, tomato sauce and sambal oelek. Salt and pepper.
Pour mixture onto the ham and eggplant. Add spinach on top as well as thyme and cheese.
Place in the oven for approx. 30 minutes. Enjoy with a fresh salad.

Bacon Wrapped Cheese
Best of two worlds: bacon and cheese. I use a high quality bacon and a mild Swedish cheese.
2 Servings
• 150 g of Bacon
• 150 g of Cheese
• 1 cup of Diced Tomatoes
• 3 Cloves of Garlic
• Basil
• Salt & Pepper
Preheat oven to 200 ° C (390 ° F). Cut cheese into cubes. Wrap the cheese cubes in bacon and place in an oven proof pan. Salt and pepper. Pour diced tomatoes on top. Press garlic and add some basil to it. Place in the oven for 20 minutes.

Birthday Dinner
Today is my birthday and what's better than finishing this day off with a beautiful dinner with my favourite cuisine!? We had Spanish tapas of course! The restaurant is a homey and intimate family restaurant in downtown Stockholm.
I had shrimp with mojo sauce, fried mushroom, spinach with garlic and cheese, meatballs in tomato sauce and mush more. So yummy!
